							<p>Kue kamu selalu ambruk di tengah? Ini bisa terjadi pada pemula maupun ahli Baking. Kamu sudah mengikuti resep, atau mungkin kamu melakukan improve. Segalanya berjalan sesuai rencana sampai akhirnya tidak. Kue yang sempurna itu bisa tenggelam di tengahnya, mungkin.. saat masih dalam oven, mungkin saat dingin. Kok bisa? Berikut adalah alasan paling umum mengapa kue (terutama membahas kue atau roti yang dibuat dengan pengembang kimia seperti baking powder atau baking soda) bisa mengalami lubang tenggelam yang ditakuti, dan inilah cara termudah untuk menghindarinya.</p><h2><strong>1. Menggunakan Loyang Kue dengan Ukuran atau Bentuk yang Salah.</strong></h2><p>Resep yang baik juga menentukan ukuran loyang agar kue dapat menopang dirinya sendiri, dan agar bagian dalam serta luar matang dengan sempurna dalam waktu yang sama. Perbedaan antara loyang 8 inci dan 9 inci mungkin terlihat sepele, tetapi ini sekitar 25% perbedaan dalam volume. Jika loyang terlalu kecil, adonan mungkin terlalu dalam. Kue akan mengembang dan mungkin terbentuk kubah, tetapi jika bagian tengah masih basah, bagian tersebut akan runtuh sebelum struktur di tengah mengeras. (Kue juga bisa tumpah ke sisi loyang dan ke lantai oven, atau keduanya!) Tentu saja, kamu bisa menahan sebagian adonan jika loyang kamu terlalu kecil — aturan praktis yang baik adalah mengisi loyang hingga sekitar dua pertiga penuh.</p><p>Bentuk loyang juga penting. Banyak kue Bundt dan kue kopi manis yang lembap yang dipanggang dalam loyang tabung memiliki rasio gula atau cairan yang tinggi sehingga bisa melemahkan struktur kue. Tabung di tengah itulah yang memungkinkan kue tersebut mengembang dan mengeras, sedangkan adonan yang sama yang dipanggang dalam loyang bulat atau kotak mungkin akan runtuh.</p><h2><strong>2. Memanggang di Oven yang Terlalu Panas atau Terlalu Dingin</strong></h2><p>Oven yang terlalu dingin atau terlalu panas meningkatkan risiko bagian tengah kue menjadi tenggelam. Untuk membantu memahami apa yang terjadi ketika oven kamu terlalu dingin, ini adalah penjelasan sederhana dalam satu kalimat tentang memanggang: mengocok mentega dan gula menciptakan ribuan gelembung udara kecil yang mengembang ketika gas yang dihasilkan oleh bahan pengembang kimia (baking powder dan/atau soda) terkena panas oven. Jika oven kamu terlalu dingin, gelembung-gelembung udara tersebut mengembang dengan lambat, menjadi terlalu besar, bertabrakan, dan membentuk sel-sel besar sebelum struktur kue mengeras. Struktur besar yang longgar ini tidak akan mampu menopang berat adonan dan akan runtuh. Dan ketika kue mengeras, teksturnya akan menjadi kasar karena lubang-lubang besar tersebut. Jika oven Anda terlalu panas—yah, kita sedang berdebat sedikit di sini. Kebijaksanaan konvensional menyatakan bahwa panas berlebih menyebabkan bagian tengah kue yang terangkat dan retak seperti &#8220;Gunung Berapi&#8221; karena pengembang bekerja terlalu cepat dan kue mengeras dalam posisi puncak (seperti <em>muffins</em>, yang biasanya dipanggang pada suhu lebih tinggi).</p><p>Jika oven kamu terlalu panas, bahwasanya panas yang berlebihan menyebabkan pusat kue berbentuk “Gunung berapi” yang retak saat bahan pengembang meledak dengan cepat dan kue mengeras di puncak (seperti muffin, yang biasanya dipanggang pada suhu lebih tinggi untuk menciptakan puncak). Dan itu memang terjadi. Tapi kue yang mencapai puncak terlalu cepat (seperti seorang atlet sekolah menengah) kemudian bisa runtuh pada dirinya sendiri (seperti seorang atlet sekolah menengah) jika adonannya masih terlalu basah — pada dasarnya menghasilkan hasil yang sama seperti oven yang terlalu dingin.</p><p>Gunakan termometer oven untuk memastikan akurasi. Secara berkala periksa suhu oven kamu agar tahu bahwa oven mencapai dan mempertahankan suhu yang benar. Selain itu, mengkalibrasi dengan dua termometer di tempat berbeda memungkinkan kamu menemukan titik panas dan dingin di oven.</p>						</div>
